Roasted Chicken Fillet on a Bed of Cous Cous
This light and tasty recipe is perfect for an outdoor meal!
4 Big Al’s Roasted Chicken Fillets
1 red onion
olive oil
juice of 1 lime
1 clove of garlic
tsp of chilli flakes
200g dried cous cous
500ml boiling water
1 yellow pepper
Cook Big Al’s Roasted Chicken Fillets in the oven as directed on pack
In a bowl, add boiling water to the cous cous and leave to stand
Heat oil in a wok or pan, add the chopped pepper, onion, garlic and stir-fry until soft
Add the cous cous and lime juice to the pan
Add the Big Al’s Roasted Chicken Fillet to the bed of cous cous
Sprinkle with chilli flakes and serve
