Chicken and Pesto Melt
A perfect lunch time snack with a difference!
3 Big Al’s Roasted Mini Fillet pieces
1 panini/bread roll
50g sliced mozzarella
½ tsp basil pesto
mayonnaise
salt & pepper
Place Big Al’s Roasted Mini Fillets onto a pre-heated George Foreman and cook for 6 - 7 minutes
To make the pesto mayonnaise, mix 2 tbs of mayonnaise with ½ tsp of basil pesto
Spread the pesto mayonnaise onto the panini, add the chicken and top with the sliced mozzarella
